Cauliflower is thought to have derived from broccoli. It is also a close relative of cabbage, Brussels sprouts, collards or kale, and kohlrabi. The head, or curd, is actually pre-floral meristematic tissue, rather than floral tissue as in broccoli. The curd must be blanched, or kept white, by overwrapping the long leaves and tying them to exclude light. Cauliflower has little tolerance for heat.
